Nothing can beat the smell and the taste of freshly baked cookies, don’t you think? For this Christmas I came up with a new quick recipe: peanut butter Christmas cookies. Yum!
Tip: Use a star shaped cookie cutter with a hole in it. This way you can easily hang them (with a ribbon) in the Christmas tree.
ca. 20 cookies
3 days in an airtight container
(star shaped) cookie cutter
120 g peanut butter (1/2 cup)
75 g oatmeal (flour) (1/2 cup)
1 tsp speculaas spices
3 tbsp coconut blossom sugar
pinch of sea salt
Preheat the oven to 175 ºC. Mix the eggs lightly in a big bowl and add the peanut butter. Stir everything really well. Add the other ingredients to the mix. Knead the dough smooth with your hands. Pollinate your kitchen counter with some flour (oatmeal) and roll the dough out until it becomes a large patch. Use the cookie cutter to make star shaped cookies from the dough. Knead the rest of the dough into a ball and roll it out until all the dough has been used. Put the cookies (with a little space between them) on a baking tray covered with baking paper. Bake the cookies in the middle of the oven for 15-20 minutes light brown and done. Take them from the baking tray and let them cool down on a grill.
