If you like piña coladas... It’s at its best ice cold. You can also add a bit of rum to the mix! It’s your party ; ).
Portion 6 glasses
serve direct. 1 day in the fridge
600 ml (2 1/4 cups) pineapple juice, fresh
300 ml (1 1/4 cups) coconut milk
crushed ice (you can make this by pulsing ice cubes in the blender)
1 slice pineapple
optional: 50 ml (1 shot) rum per glass
Combine the pineapple juice, coconut milk and ice in the blender and squeeze the juice of a half a lime on top. Blend until smooth. Pour (through a sieve) into long-drink glasses or wine glasses - whatever you have at home. Add the rum, if you’re using it. Place a slice of pineapple on the rim of the glass. Add a straw and an umbrella too!
