This delicious and super healthy bowl is already available on practically every street corner in New York and is appearing more and more often at hip lunch places in Amsterdam. Yay! But you can also make it easily at home. It’s much more fun and cheaper ; ) Verrry good with some homemade rawnola.
Info: The açaí berry (pronounced ‘assa-ee’) is the core ingredient of this recipe. It’s a dark blue/purple fruit that’s about 2.5 cm in length and is grown in the Amazon area of South America (Brazil, Suriname and Peru). It grows on the açaí palm and is very healthy! The unique flavor of the açaí berry is reminiscent of blueberry, nuts and chocolate. Yumm!
blender or immersion blender
2 frozen bananas
200 g frozen açaí
300 ml oat or almond milk
3 medjool dates, pitted
2 small handfuls blueberries
2 tbsp grated coconut
4 small handfuls of rawnola
Put the bananas, açaí, plant-based milk and pitted dates in the blender and process until thick and creamy. If the mixture is too thick, add another splash of plant-based milk. Transfer the mixture to a bowl and top with the remaining ingredients to serve. Enjoy!
Tip: Frozen pureed açaí is available at select grocery stores and at South American specialty stores. Bought a large package of frozen açaí? Let it thaw out a bit, cut it into pieces and store the pieces separately in bags in the freezer so that you can use them one at a time. You can also use two tablespoons of açaí powder, but you’ll need to add one extra frozen banana.
