Almond butter

My favorite spread! I love this on a rice cake with sliced avocado. I also use nut butter as a topping for oatmeal or cookies. And sometimes I can’t resist just dipping my finger directly in the jar.

Ingredients

2 cup (300 g) almonds 
pinch of sea salt

With only 2 ingredients you make the best almond butter.
Method
Preheat the oven to 350°F (180°C). Spread the almonds on a baking sheet, sprinkle with sea salt, and roast in the oven for 8 to 10 minutes, until they begin to brown. Remove the nuts from the oven and allow them to cool. Transfer the nuts to the food processor and blend until finely ground. It takes 5 to 10 minutes to process the nuts and you'll ground to forming a fine meal, and then the oils in the nuts will begin to be released. You need to keep blending until the nuts liquefy and the mixture becomes creamy. Add a bit more sea salt to taste and spoon the nut butter into a small glass jar. The nut butter will keep for quite a while, but I don't know how long it'll last - not long in my kitchen, in any case!
