Banana-nut ice cream
Wow, this weather! Wonderful. Usually when it’s so warm out, I drive up to my mem’s house in the north part of the Netherlands on the weekends, just like last weekend. It gives me a chance to relax and drum up inspiration for new recipes from all the delicious ingredients in my mom’s garden. These days, I’m in the office in Amsterdam Monday mornings right at 9:00am, handling all things related to the Powerfoodies Market (my online store). Yes, all those lovely orders need to be packed up (plastic-free!) and sent off. It’s such a special experience for me as it’s my own products that I’m selling and shipping. They’re all selling well, but there are a few items that really flying: the straws, apple cider vinegar, the vanilla powder and, the one and only, GUCOT-nutbutter. It is soo tasty and healthy, too. I have all the jars at word – very dangerous, haha! I’ll eat a spoonful every day, directly from the jar, but it’s also delicious stuffed into medjool date, spread on a crunchy cracker and, you guessed it, in my tempeh.
And what are you thoughts on banana-nut ice cream in this heat? Sounds like music to your ears, right? Have a look at the easy peasy recipe below. I made it last month and have been eating it bit by bit every day since. The flavor combination of the nut butter (salty) with the chocolate chips and vanilla make it a real summer treat. I’m addicted. Now it’s your turn ; )
PS: If you don’t happen have bananas sitting in the freezer, peel them the day before and slice them into pieces before you put them in the freezer.
Approx 15 mins.
1 large jar
Eat immediately or max. 3 months in freezer
food processor (recommended) or blender
Roughly chop the chocolate. Add the other ingredients to a food processor or blender and blitz until creamy. transfer the mixture to a bowl and add the chocolate. Stir with a spoon and serve in a pretty glass or bowl. You can garnish it with a but of extra chocolate and (homemade) granola.
