I’m sharing one of my favorite recipes this week: a delicious, healthy and gluten free banana loaf! It’s even better with some coconutcream and blueberries on top!

4 days in an air-tight container
Large mixing bowl
200 g oat, spelt or buckwheat flour
150 g palm- or coconut sugar (optional)
1 ½ tsp aluminum-free baking powder
½ tsp cinnamon
60 ml applesauce, unsweetened
3 bananas, pureed
½ tsp vanilla powder, unsweetened
a pinch of Himalayan salt or sea salt
Preheat the oven to 180°C. Combine the ingredients in a large mixing bowl and whisk together. Grease your loaf tin with a little coconut oil and transfer the dough in the loaf tin. Bake for 45 minutes in your pre-heated oven. Enjoy!
