Chai Goodnight Drink
When I lived in New York, I once did a three-day juice cleanse and this drink was how I ended each day. It’s so tasty and sweet, it almost qualifies as dessert! The cinnamon, ginger, vanilla, and cardamom also help cultivate a little bit of Zen. Sweet dreams!

Ingredients
70 g (scant ½ cup) raw cashews
400 ml (1 ¾ cups) water
40 g (scant ½ cup) pitted dates
1 tsp cinnamon
a pinch of black pepper
½ tsp vanilla, unsweetened
¼ tsp powdered ginger
¼ tsp ground cardamom
Soak the cashews in abundant water for at least 30 minutes. You can do this ahead of time, in the morning, for example, to give the cashews the whole day to soak. Then add all of the ingredients to a blender and puree until smooth. I love to heat it up but you can also drink it cold. Pour the creamy mixture into a big tall glass and enjoy!
