You know what I really enjoy? Spending an entire Sunday making all sorts of things I can eat and enjoy throughout the week. I just love to prep. The results of last Sunday’s efforts included these yummy cinnamon cookies. And I’m not the only one that’s a fan… My niece and nephew were over this weekend and the cookies disappeared pretty quickly! No worries though, they’re super easy and quick to make.
They’re a perfect snack on the go and are great alongside a cup of tea.
5 days (in an air-tight container)
200 g oat flour (or other whole grain flour of your choosing)
2 ½ tsp cinnamon
2 tsp vanilla powder , unsweetened
100 g raisins
1 tsp baking soda
1 tbsp lemon juice
70 g coconut oil, softened
50 ml oat milk
2 tbsp date syrup (or maple)
Preheat the oven to 160°C (320°F). Combine all the dry ingredients in a mixing bowl, stir well and add the coconut oil, date syrup, oat milk and lemon juice. Mix well. Using your hands, form the dough into a large ball. Divide this ball into +/- 15 smaller balls. Place the balls on a parchment-lined baking sheet and flatten each one with the palm of your hand. Bake the cookies for 15 minutes in the oven. Once cooled, the cookies are firm on the outside and soft on the inside. Enjoy! ;)
