The minute the sun starts shining, I run outside (preferably right back to It Heitelân) and try to make the most of it. I love summer! Summer vegetables and fruit are my favorites and what’s even better is being able to eat them outside. I’m staying in the Netherlands this summer. I’ll be sailing in Friesland, jumping into the sea on Terschelling and enjoying my mother’s garden – making fresh herbal tea, eating lots and lots of arugula (rocket), picking wild blackberries and sunbathing… Oh, and eating popsicles!
Every summer I create a new variety of homemade frozen treats. I’ll use fresh fruit, for example, or fruit water or nuts. I usually have to play around a little bit, but once I’ve found the perfect recipe I’ll make a big batch so that I always have something tasty on hand for my niece and nephew or for myself when I’m looking to cool down a little. These ice pops are not only very cute, they’re also very good for you.
Chia seeds contain omega-3 fatty acids, protein, iron and fiber, which helps you feel full. Chia seeds are a good replacement for milk in your diet as they are rich in calcium and boron, which improves calcium absorption in the body. Thanks to the fresh fruit they contain, these ice pops are full of vitamin C. They’ll be a big hit at any summer party.
