It’s cucumber time! That’s what we call the summer, the off-season, in Holland. It’s not quite an off-season for me… on the contrary actually. For me, it’s literally cucumber time – haha. When the temperature rises, I feel like eating light, refreshing foods: salads, fresh fruits and especially a lot of extra fluids to stay hydrated. This one-year-old, dark green fruit veggie is crunchy, works diuretic and is filled with vitamins. Remember to eat the skin as well; it contains a lot of fibre and minerals – such as potassium and magnesium. Choose the organic kinds though (or wash the ‘regular’ kind thoroughly!); other cucumbers have a wax layer, to protect them during transportation and against insects
You can find this green juicy friend in an average salad in any Dutch home, but you can be way more creative. For example, make cucumber soup! Yes, soup! I got to work this weekend and I whipped up the most delicious cucumber soup recipe for my new cookbook.
