Party in a weck jar
These jars are way too cute when they’re filled with chia-banana-trifle. I actually came up with this idea by accident… After a long day of slaving away in the kitchen – which I’ve been doing non-stop for a couple of weeks now, cooking day and night to create my book – I realized I needed to whip up the next day’s breakfast. I just used a few ingredients that I had laying around, like chia seeds. They’re amazing as they’re high in protein and omega 3 fatty acids. They’re a great supplement to your diet if you’re like me and don’t eat a lot of meat and fish.
Use your blender to make the pudding super quickly and leave it in the fridge overnight. The next morning, it’s ready to eat! What’s even more fun is to be creative and vary the ingredients you use. Grabbing a little party in a weck jar from the fridge is a great way to start your morning. After spooning in a layer of pudding, add a layer of nut butter, then one of jam and finish with some fresh fruit. It’s a nutritious, delicious and fun way to have breakfast!
3 weck jars (125 ml)
For the chia pudding:
250 ml almond milk
1 tbsp grated coconut
3 tbsp chia seeds
1 tsp vanilla powder, unsweetened
a pinch of cinnamon (optional)
The other layers (these are just a few ideas, feel free to come up with your own variations!):
6 tbsp strawberry jam, unsweetened
2 handfuls of blueberries
3 tbsp (mixed) nut butter
Combine all the ingredients for the chia pudding with the exception of the chia seeds in the blender and process until the pudding is nice and thick. Transfer the pudding to a jar or a large glass. Stir in the chia seeds, distributing them evenly throughout the pudding. Refrigerate the pudding overnight. The next morning, grab your three weck jars and start layering!
Layer 1: 1 tbsp chia pudding
Layer 2: 2 tbsp strawberry jam
Layer 3: 2 tbsp chia pudding
Layer 4: 1 tbsp nut butter
Layer 5: sprinkle of blueberries
