Mother’s Day: Top 5 recipes
I always love cooking for my mem, especially on Mother’s Day, when I take the time to cook something special for her or we head into the kitchen together to whip up some Powerfood. Quality time! Want to surprise your mom with some tasty baking, breakfast in bed or dinner for two this year? These are my five favorite breakfast, dinner and snack options for Mother’s Day. May is rhubarb month, so do you feel like trying something new? Sneak into the kitchen early Sunday morning to make this tasty rhubarb breakfast crumble for your mom. It’s full of fruit and tastes even better with a dollop of coconut yogurt on top. Winner!

Who doesn’t love waffles? You’ll make your mom super happy if you serve these warm, freshly made waffles with chia jam for her breakfast in bed. They’re delicious and look super festive, right?

These thin pizzas are the ultimate comfort food and are perfect for a homemade lunch or dinner with your mom. Choose your own toppings for a nice touch or go for my favorite version with shiitakes, feta and capers. Delicious!
#4. Happy Raspberry Cake
Hey, good looking! This is the newest cake recipe on my blog and I’m a fan. It’s delicious and has a lovely pink color. Mother’s Day proof! Make it the night before so that all you have to do the next day is add some fresh fruit and some grated coconut on top.
#5. Lemon bars
These really are my very favorite spring treats and I think your mom will love them too. The lemon makes them nice and tart and they’re made even better by adding fresh blueberries and chia jam.
