Overnight Chia Kickstart Pudding
This is yet another version of my kickstart breakfasts. Chia seeds make this recipe nice and airy (and they’re full of omega 3 fatty acids!), Medjoul dates sweet and the cashews make it creamy. I like to make this the night before so that I have a delicious breakfast waiting for me in the fridge in the morning. Enjoy!

Ingredients
70 g/2.5 oz. cashews
50 g/1.7 oz. oatmeal
2 Medjool dates
200 ml/scant 1 cup oat milk (or other plant-based milk of choice)
100 ml/scant 1/2 cup water
½ tsp vanilla (unsweetened)
a pinch of sea salt
3 tbsp chia seeds
½ tsp ground cinnamon (optional)
Soak the cashews in a bowl or jar in water for at least an hour (or overnight). Drain and rinse the cashews and combine them with the oatmeal, dates, milk, water, vanilla and salt in a food processor or blender and mix until creamy. Divide the mixture across two jars or glasses and add half the chia seeds to each and stir. Place the jars/glasses in the fridge for at least an hour (or overnight). Then it’s ready to enjoy! ;)
