Ah, het is weer Sinterklaastijd! Een prima excuus om te chillen bij de open haard met een boek en wat lekkers. Als ik ‘me-time’ heb, wil ik luieren en eten. Ik ben dol op hartig, maar in deze tijd eet ik ook iets meer zoet. Af en toe zondigen is goed, maar dan doe ik het wel zonder geraffineerde suiker.  Misschien is het even wennen als een echte zoetekauw bent, maar zodra je de smaak te pakken hebt krijg je steeds minder behoefte. Dus ga lekker aan de slag en maak natuurlijk gezoete baksels zelf! Hieronder vind ik je lekkere #powerfood pepernoten (eigenlijk zijn het kruidnoten maar ik vind pepernoten mooier klinken ; ) ) met kokosbloesemsuiker en dadels voor tijdens de feestdagen… Geniet!

Benodigdheden
Vergiet
Blender of keukenmachine
Bakplaat met bakpapier 





Ingrediënten

– 140 gram (Medjoul) dadels, zonder pit
– 40 gr kokosbloesemsuiker

- 2 tl wijnsteenbakpoeder (of 1 tl bakingsoda + 1 tl appelazijn) 
– 2 tl speculaas- of koekkruiden
– snufje zeezout
– 125 gr spelt- of havermeel, liefst volkoren 
– 50 g kokosolie , gesmolten
– scheutje water

Topping (optioneel)
– gesmolten pure chocolade (a bain marie)
– cacaopoeder
– geraspte kokos



Keep calm and eat kruidnootjes!
Bereiding

Week de dadels 15 min. in water. Verwarm de oven voor op 160 C. Doe kokosbloesemsuiker, bakpoeder, kruiden, zeezout en het speltmeel in een kom en voeg de kokosolie toe. Kneed alles door elkaar. Laat de dadels uitlekken in een vergiet en snijd ze in stukjes. Doe ze samen met een scheutje water in de blender en mix ze fijn. Als de dadels aan de zijkanten blijven kleven, dan zet je af en toe de keukenmachine of blender uit en schraap je de stukjes met een lepel naar het midden. Doe de kleverige dadelmassa bij het droge deeg en kneed alles met je handen tot een samenhangend soepel deeg. Maak er een grote bal van. Neem er steeds een plukje deeg van af en rol dit tot een klein balletje. Leg op het bakpapier en ga door tot je deeg op is en de bakplaat vol ligt met zo’n 50 balletjes. Bak ze ongeveer 25 min. in de voorverwarmde oven. Kijk af en toe even of ze niet te donker worden want iedere oven is weer anders. Laat ze dan even afkoelen.
