¾ zucchini
½ cucumber
1 avocado
1 garlic bulb
1 inch of fresh ginger
1 lemon
1 tsp freshly ground black pepper
1 tbsp extra virgin olive oil
1 tsp sea salt
a handful of fresh parsley
12 lovage leaves
200 ml water
A delicious and refreshing soup for summer days! Enjoy!
Method
Chop the zucchini, cucumber and avocado into small pieces and put them in your blender. Press the garlic using a garlic press, grate the ginger and squeeze lemon into the blender and add the black pepper, olive oil, sea salt, parsley and the lovage leaves. Blend until nice and creamy, adding the water as you go.
