Yes! You can also eat quinoa as breakfast or after a good workout! It is truly delicious with warming spices, some nuts, a splash of maple syrup and juicy blueberries. Plus, it’s full of protein and fiber and gives you an enormous boost to get through your day!
50 g quinoa, rinsed
150 ml unsweetened almond milk
a small handful blueberries
a small handful pecans or walnuts
a pinch of cinnamon
a pinch of powdered ginger
a pinch of nutmeg
1 tsp honey or maple syrup
Combine the milk and the rinsed quinoa in a medium saucepan and bring to a boil, stirring from time to time. Reduce the heat to low, cover and simmer for about 15 minutes or until most of the milk has been absorbed. Remove from the heat and let stand, covered, for five minutes. Then stir in the blueberries, pecans, ginger, cinnamon, nutmeg and maple syrup/honey and transfer to a nice bowl. It’s even more delicious with a dollop of nut butter on top! Enjoy! ;-)
