When it comes to partying, my social life has been running on low lately. With an ongoing flu virus, photo shoots and a fully booked schedule, I decided it was best to leave the party scene for a little while. I set high standards for myself, so I really can’t afford to get sick or to be too stressed out. Taking time out can get a little boring though, for a party girl like me. And I do know that when you’re working hard, it’s really important to get your mind off your work and on to other things and just to let go once in a while.
So, along with working my butt off, I try to make time for some fun stuff – like playing Pharrell’s new album, dancing around in my living room and drinking loads of juices and eating healthy snacks. This is precisely how I invented this recipe for healthy candy for myself! It’s good to step away from your laptop from time to time and just mess around in the kitchen (you can do that while dancing to Pharrell). You and your body will be very happy!
approx. 8 balls
large mixing bowl
♣ 150 g almond flour
♣ 2 tbsp coconut oil
♣ juice of 1 large lime or lemon
♣ 1 tbsp maple syrup
♣ 2 handfuls white mulberries
♣ 1 tbsp Himalayan salt or sea salt
♣ 1 tsp vanilla powder
♣ Grated coconut
Combine all ingredients, with the exception of the grated coconut, in a large mixing bowl. Knead everything together and form little balls out of the dough using your hands. Coat them in grated coconut and chill them in your fridge for about an hour. Take them out and snack away!
