At least I find it a bit tougher than usual not to indulge in all the tasty food that’s around at this time of year. Everyone has done their best, food is abundant and everything smells so good! After all these festive months, I start to feel, in many ways, like I need to pay a bit more attention to my body. So it’s time to get to work! It’s time for juices, smoothies, lots of vegetables, minimal sugar and extra exercise. Since healthy food really should taste great too, I think up recipes that you can enjoy without feeling guilty (and if you want to, you can even eat a second helping).
You can do so much with squash. I use it in breads, salads, rice dishes, soups, desserts and smoothies, as it has a delicious sweet taste and a creamy and thick texture. It really is the perfect food for these cold winter months. In addition to being tasty, it’s also great for you – it is full of beta-carotene, magnesium, potassium and iron. Almost all of the squash plant is edible: the leaves, flowers, seeds, the oil that is extracted from the seeds, the peel and the flesh. I really advise you to eat a dish that contains squash every now and then. It’s good for your intestines and regulates blood sugar, and it’s also great for pregnant women, as it aids the development of the baby and helps you to eliminate excess fluid.

Ingredients
450 g butternut squash
1 banana
1 tsp cinnamon
½ tsp vanilla powder, unsweetened
1 clove
1 tsp powdered ginger
4 dates, pitted
300 ml oat milk
Preheat the oven to 200°C. Cut the squash in half length-wise and place each half cut side down in an oven-proof dish. Add a shallow layer of water to the dish and roast the squash for 40 minutes in the oven. Once the squash is cooked, peel it and combine the flesh with the remaining ingredients in the blender. Mix until smooth!
