I’m staying close to home this year because my hometown is so incredibly fun and there’s so much to do and see; from dancing on boats to fantastic festivals every week. There are also markets that sell seasonal produce where I’m completely in my element and buy strawberries or cucumbers to make ice pops, juices and smoothies. But most of all, I look forward to the picnics in the parks of Amsterdam and the chill-out days with friends on the roof terrace… Eating and drinking all day, everyone bringing their own homemade dish to share.
I always show up with the same thing to events like this – my favorite summer dish, gazpacho. It’s a light, Spanish soup, served ice cold. It’s refreshing and the ideal dish on a warm day. And it goes very well with a nice cold glass of wine. This summer I’ve also been making watermelon pizzas – fresh, light and an easy snack for everyone! You can make the toppings as elaborate as you’d like. Below is one I made with coconut yogurt, blueberries, dried bananas and coconut chips. Savory versions are also tasty, with soft goat cheese (or feta), basil and walnuts, for example. Try it and share! (#renskroes).

1 watermelon slice
200 g coconut yogurt
Handful dried banana
1 tsp maple syrup
Carefully saw the watermelon into one or more 1-inch round slabs. Spread the yogurt in the watermelon "crust," then top with the other ingredients. Cut each pizza into eight equal slices and serve immediately. Soooo goood!
