I’ve recently become a big fan of this delicious, easy recipe. You can add it to so many different dishes. This is the basic recipe, but if you’re looking to spice things up a bit you can always add a bit of curry powder. Fresh dill is also an excellent option with (sweet) potato and parsnip fries. Keeps for a week in an airtight container in the fridge
Immersion blender or food processor
200 g/7 oz. silken tofu
2 tsp mustard
1 tbsp maple syrup
2 tbsp lemon juice
a pinch of sea salt
Combine all the ingredients in a blender or food processor. Blend until smooth and fully combine. Transfer to a jar for storage.
