Mijn top 5 pompoen recepten
Zoals velen van jullie misschien wel weten behoort pompoen tot een van mijn lievelingsgroenten tijdens de herfst. En aangezien de herfst al op de loer ligt (hier in New York schijnt de zon gelukkig nog volop ; )), dacht ik dat het een goed idee was om mijn all time top 5 pompoen recepten alvast eens op een rijtje te zetten. Wist je dat bijna alles van de pompoen eetbaar is? De bladeren, bloemen, pitten, geperste olie uit de pitten, schil én het vruchtvlees kun je allemaal verwerken in diverse dishes. Ik kan je dus zeker aanraden om af en toe een gerecht met pompoen te eten. Het is goed voor je darmen en het houdt je bloedsuikerspiegel in balans. Daarnaast is het ook goed voor zwangere vrouwen voor de ontwikkeling van de baby en voor het afvoeren van overtollig vocht (Mens en Gezondheid, 2017).
Stiekem heb ik best wel veel zin om weer met allerlei herfstige groenten zoals pompoen, bloemkool en pastinaak te preppen. Wat is jouw favorite herfst groente? Laat ‘t me weten onder aan de comments!
#1: Pompoen quinoa curry
Comfort food. Dat is mijn lievelings! Vooral rond deze tijd van het jaar eet ik graag warme gerechten uit een bowl. Deze pompoen quinoa curry maak ik graag voor vrienden. Everybody loves it!
#2: Pompoen breakfast cookies
Op zoek naar een snelle maar gezonde snack voor ontbijt of tussendoor? Dan zijn de pompoen breakfast cookies je nieuwe beste vriend ; ) Binnen no time gebakken en heerlijk vullend voor een goed begin van de dag.
#3: Zoete pompoensoep
Herfst betekent voor mij ook lekker veel soep eten. Niks gaat boven een grote pan zelfgemaakte pompoensoep. Heerlijk. En heel handig om extra veel te maken, in te vriezen en te bewaren voor later. Winner!
#4: Pumpkin spice granola
Een van mijn lievelings Sunday prepping recepten: Pumpkin spice granola. Deze topping maak ik graag in de herfst vanwege de kruiden en pompoen die zorgen voor een verwarmend effect. Perfect voor over je kokos yoghurt of homemade smoothie bowl (voeg link toe).
#5: Spicy pompoen smoothie
Deze heerlijke zachte, lauwe smoothie is perfect in de wintermaanden en is powerfood proof. Het zit bomvol goede voedingsstoffen en is heel easy klaar te maken. Hmmm!
