I absolutely love salads. I can’t get enough of trying out new combinations. A few times a week, I’ll experiment with different leafy greens, other ingredients and dressings. Occasionally I’ll overdo it a little by mixing too much together, but it’s pretty tough to go wrong with a salad. I generally just throw everything into a big bowl and toss it. Success pretty much guaranteed!
What I’m really into at the moment is watercress. Not only is it spicy and tasty, it’s also really good for you. Watercress belongs to the top five healthiest vegetables and fruit because it contains almost every vitamin and mineral out there. It’s particularly high in iodine, a mineral that’s important for metabolism. Bread also contains iodine. So, if you’re like me and not a real bread eater, you can compensate with watercress.
This is the delicious result of my salad experiment this weekend…

½ medium red onion
125 g cherry tomatoes
90 g feta
2 tbsp black olives
80 g watercress
1 tbsp balsamic vinegar
1 tsp honey
2 tbsp olive oil
a small handful of roasted mixed nuts
Chop the avocado, onion, tomatoes and feta into small pieces. Combine them in a bowl with the olives and watercress. Make a dressing of balsamic vinegar, honey and olive oil in a small bowl. Mix well and add a few drops of lime juice. Pour over the salad. Season with salt and pepper and give the salad a toss. To add the finishing touch, sprinkle some nuts on top. Enjoy!
