World Vegan Day: Top 10 vegan recipes
It’s World Vegan Day! And to celebrate, I’ve compiled a list of my top 10 favorite vegan recipes, just for you! Which one is your favorite? Let me know in the comments below!
This may very well be my favorite vegan recipe of all time. The raw cheesecake. You’ll steal the show with this delicious cake, guaranteed. The thick, cashew layer makes this cake super creamy and is complemented perfectly by the tartness of the cherry jam. Leftovers? Slice the cake into individual servings and store them in the freezer until the next party.
2. Spiral quiche
Quiche is always a good idea! This beautiful vegetable tart requires a bit of time and precision to make, but the result is unbelievable. Tip: Use a cheese slicer or grater to slice the vegetables thin enough to create a nice, ‘spiral’ effect.
3. Choco-nana bread
Looking for a new twist on the classic banana bread? Try this chocolate version! It’s delicious as a snack or for breakfast when you’re short on time.
4. Mint-pomegranate salad
This fresh salad makes the perfect lunch. The pomegranate seeds give this dish the perfect sweet-sour twist. Tip: make an extra portion for lunch the next day – it keeps for up to two days in the fridge and is easy to take with you to work or school.
5. Snack cookies
The ultimate snack for an evening on the couch or when you’re feeling peckish during the day. These crispy cookies are super tasty and quick to make.
6. Zucchini noodles
Looking for a light, tasty, but filling dish? Try these zucchini noodles with homemade pesto. I make the zucchini noodles using a spiralizer. They’re easy to make and give your meal an extra veggie boost.
7. X-mas cupcakes
Mmm… These cupcakes are a must bake. The spices in the muffin Deze cupcakes zijn een must bake. De kruidige muffin in combinatie met de romige roze frosting is te lekker. Een echte sweet pleasure!
8. Golden Milk
I discovered this golden-yellow drink a while back when I was learning about the Ayurvedische lifestyle and it was love at first taste. This creamy, warm, sweet drink tastes delicious and drinking it has a whole host of health benefits. It’s the perfect drink for the colder days of the year, if you ask me. ; )
This is probably the tastiest and healthiest breakfast ever! It’s very filling and super creamy. It makes a great pre-workout breakfast or a quick snack that gives you the boost you need (or kickstart!) to get through a long, busy day.
10. Pumpkin-quinoa curry
Last but not definitely least: pumpkin-quinoa curry. This delicious, autumnal dish is so nutritious and is perfect for this time of year. Dish it up into bowls, sprinkle with cilantro (or fresh parsley) and… voilá!
